Arroz Con Pollo (Chicken and Rice)

Ingredients

  • Chicken Legs and Thighs (Breasts if you prefer)

  • Yellow Rice

  • Bell Pepper

  • Peas

  • Shallot

  • Garlic

  • Chicken Bone Broth

  • Pepper

  • Cumin, Paprika

  • Cilantro

Preparation

Step 1


Prepare the chicken to be baked and broiled. Season with pepper and garlic powder. Place a baking rack in a large pan (I use aluminum pans for this). Place the season chicken on the rack. I use a rack because I don't want the natural oils released from the chicken getting into the rice when the chicken is added. Bake at 375 for about 25 minutes.


Step 2


Finely chop the bell pepper, garlic and shallot. Sauté the bell pepper in olive oil in a large skillet or large cast iron Dutch oven (my preference) and until it softens and add the shallot and garlic. The shallot and garlic only need about a minute to cook. Season the rice with pepper, cumin and paprika (to taste). Add more olive oil and add the rice to the large skillet. Stir the rice until it has absorbed all the oil and flavors in the pan. Once the pan is dry start to add the chicken bone broth (amount as per instruction from rice). I do tend to add a bit of extra stock to keep the rice moist. This should take about 25 minutes. Add the peas to the rice 15 minutes after you have started.



Step 3


After the chicken has baked, turn on the broiler to crisp the skin of the chicken for about 5 minutes. Remove the chicken and place into the rice. Slowly simmer for about another 5 minutes allowing the tase of the chicken to incorporate into the rice.



Step 4


Serve on plate together, sprinkle with chopped cilantro and enjoy.

Note: You may have noticed I did not mention the use of salt. The rice, bone broth and peas have enough salt already for this dish.
