Ingredients
Ten-ounce Filet Mignon
Wild Rice
Asparagus
Bacon
Salt, Pepper, Garlic Powder
Compound Butter
Thyme
Preparation
Step 1
Make sure you filet is at room temperature before cooking. Season the filet with salt, pepper and garlic to taste. I do tend to go a little heavier with salt on red meat. Season the whole filet, including the sides.
Step 2
Prepare your rice to cook. I prefer wild rice with Filet. Rice should take about 20 minutes. Wrap your asparagus with bacon and season with salt and pepper. Place asparagus in a skillet and turn as the bacon browns. This should take about 10 minutes. Start the asparagus the same time you start the filets.
Step 3
You can cook the filet on the grill or a grill pan on the stove. If you are going to use a compound butter it is easier in a grill pan. A 10oz Filet should be cooked 4 to 5 minutes per side for a medium rare finish. I do recommend placing a sprig of fresh thyme in the pan while cooking. Lightly coat the pan with a good virgin olive oil also. If you are using a compound butter (mix thyme into the butter), add the butter into the pan about 1 minute before finishing. Gives a nice touch to the Filet.
