Ingredients
1 lb Ground beef (90% lean +)
1 lb Ground Natural Pork
1 Bell Pepper
1 Sweet Onion
1/4 cup Milk
1 Egg
Fresh Parsley
Salt and Pepper
Garlic (2 to 3 cloves)
Breadcrumbs
Parmesan and Romano Cheese (optional to taste)
Preparation
Step 1
Finely chop the bell pepper, garlic and onion. Start sauteing the pepper in olive oil. After a couple of minutes add the onion and continue until the onion is becoming transparent but not burned. Add the garlic, salt and pepper and cook for about one more minute. You can continue longer but I do not like overcooked garlic.
Step 2
Mix the beef and pork together in a large bowl. I prefer to cut meats before and mix them together by hand. Add the peppers, onion and garlic and mix in the meat. Once mixed in add the milk, egg (beaten) and mix together. The mixture should be fairly moist, start adding breadcrumbs and mix together. When you have the mixture still moist, but able to mold them into a ball, and the cheese. Mix the cheese in to finish.
Step 3
The size of the meatball is your choice. I prefer to make to make them on the larger size, cupped in my hand. You should get about a dozen larger meatballs for this.
Step 4
Cooking: This is where a few might disagree. I NEVER pre-cook my meatballs. I cook the meatballs directly in the sauce. Simmer on low for about 3 hours. the meatballs should remain moist and delicious. Sauce recipes will be coming soon. also, to an Italian once you add meat to a sauce it becomes Gravy.
