About the Recipe
Pork Tenderloin is one the best cut of pork you can cook with.

Ingredients
1lb Pork Tenderloin
4 Lemons
2 Tablespoons of butter
3 Tablespoons of Flour
3/4 Cup Heavy Cream
4 Cloves of Garlic minced
Salt, Pepper, Italian Spices
Fresh Cilantro
Preparation
In a Cast Iron skillet on medium high add a couple of tablespoons of olive oil. Season the tenderloin with salt, pepper and garlic powder. Brown the tenderloin on all sides. Should take about 8 to 10 minutes. Remove the tenderloin and set aside on a cutting board.
Add the butter to the skillet. Turn the heat down to medium. Add the flour and start to mix it together creating a blonde roux. You want to cook it until it turns golden and you can no longer smell the flour. Add the juice of 3 lemons and stir to incorporate into the roux. Slowly add the cream and continue to stir. Add pepper, and Italian seasons to taste and stir. Lower the heat to low and let simmer for about 5 minutes stirring occasionally.
Slice the tenderloin into 1-inch-thick slices and place all into the sauce. Raise the medium. The pork tenderloin only needs about 5 minutes per side to cook. Right before finishing add the juice of the remaining lemon and about a half of a cup fresh chopped cilantro.

Special Note: When you are cooking with citrus (lemon, orange, lime, etc) and a cream. Always, Always use HEAVY CREAM. The citrus will cause milk or half and half to start to curdle/coagulate
