Ingredients
Cast Iron Pan
4 Thick Bone in Pork Chops
2 Granny Smith Apples
Olive Oil
Salt, Pepper, Garlic, Paprika, Cumin
Fresh Cilantro
Preparation
Step 1
Dry the pork chops. Mix all spices together (as per your taste. I go a little heavy on the cumin for the smokey taste to accent the apple) and thoroughly rub both sides of the pork chop.
Step 2
Drizzle the bottom of the cast iron with olive sear. Sear the chops on medium heat (about 5 minutes each side) until each side is brown and the sides are no longer pink.
Step 3
Move the cast iron pan from the heat. Slice the apples into wedges and place them around and on the pork chops. Place the pan in a pre-heated oven and bake for 25 minutes at 375 degrees.
Step 4
Remove pan from the oven and let the chops sit for 5 minutes for the juices to set. Sprinkle them with fresh chopped cilantro. Serve with mashed potatoes, apple sauce and vegetable or choice. You may also serve with gravy :) I will be doing a gravy page in the near future as well.
