Pork Chops and Apples

A family classic, Iron skillet seared bone in pork chops, baked with Granny Smith Apples and cilantro. Get your chops rubbed with a southwest rub and the flavor of apple. A must cook. Explore below for the prepartion and cooking details.

Arroz con Pollo

Chicken and rice, a wonderful comfort food that never fails. Saffron flavored rice and moist chicken are the perfect combination. Adding sautéed bell pepper, shallot, garlic and peas to the rice compliments the dish. Add a vegetable of choice (asparagus) and you have a winner. Explore the preparation and cooking details below.

MEATBALLS

First of all, my meatballs are on the larger size. The are a full palm, about 2.5 to 3 inches. I do not pre-cook my meatballs, they cook completely in the sauce. A fine mixture of beef, pork, sauteed onions, peppers, garlic, milk, egg, fresh parsley, oregano, parmesan cheese, and breadcrumbs. Explore the preparation and cooking details below.

Filet Mignon

Filet is my favorite cut at the Chop House. Served rare with wild rice, and bacon wrapped asparagus is true compliment to foodies. A nice dry rub, well seared on the outside. A compound butter is a great addition as well. Do not be afraid to use Choice Filet either, a great cut also. Explore the preparation and cooking details below.

Stuffed Shells

Stuffed Shells have been a family, and friends favorite for years. With Ricotta cheese being one my favorite cheeses, this is one of my favorites. Combining a stuffed shell with a fine arrabriatta sauce, is heavenly. Ricotta, Mozzarella, Spinach, and Garlic create this. Explore the preparation and cooking details below. Rigatoni Bolengese

I have been making Bolognese for many years and have adapted to many changes to it. My go to is here. One of the biggest changes I made was using white wine rather than red. Add some bacon, bison, anchovies, and a list of other ingredients and you have my classic Bolognese. Explore the preparation and cooking details below.

Alfredo

Alfredo has been one of classic dishes for years. I make Alfredo a bit different than most, but the taste is rarely ever questioned. This maybe the recipe I am asked most about. Sausage and Beans is on the favorites in the house. This a great was way to make some beans very happy. This a simple one pan dish that is easy to make and will not disappoint you. It is great the next day too!

Risotto

Risotto can be made numerous ways. I make a few different versions, but this one is my favorite. Risotto is such a classic dish. It can used as a main course of one the best sides you can eat. Not everyone has made Risotto as it does take time to make, but I assure you if you use this recipe, you will be hooked. My personal favorite is to use this as a side with a good steak. A full course Risotto will be soon posted using shrimp and scallops as well.

Stuffed Peppers

These are not your average stuffed peppers. These are world class. When you think stuffed peppers, beef and rice come to mind. Explore your palate with shredded chicken, cream cheese, mozzarella, and few spices to blow you away. Served with mashed potatoes and you have a unique homestyle comfort food that no one will forget.

Sausage and Peppers

This one of New Jersey's favorites and so easy to make. Sausage, peppers, and onions have been a Shore Classic for years. A truly simple dish that brings back memories.

Carbonara

Carbonara is one the Italian favorite weekend breakfast. This is a true treat on the weekends. A true classic, filling and a family style breakfast you won't forget. A perfect complement is a Mimosa.
